Fresh. Tangy. Sweet. Spicy. Colorful. Just what summer ought to be. This salsa is quick and easy, yet fancies up grilled meat or fish perfectly. Switch out the peaches for mango (and skimp on the honey) for a more tropical version.
Start by finely dicing a big ripe peach...
...some red onion...
...and a de-seeded jalepeño pepper.
Then chop up some fresh cilantro.
Then whisk together some honey, fresh lime juice, a dash of cayenne pepper, and a dash of sea salt.
Mix everything up in a serving bowl and chill for at least several hours before serving.
